In the dairy industry, ghee is a type of clarified butter that originated in India and is common in Indian, Middle Eastern, and South Asian cuisine. Ghee consists of butterfat with its water content evaporated and separated.

Paras Dairy has the largest integrated dairy business in India, with over 60% market share across most categories, including fresh pasteurized milk, ice cream, butter & ghee.

Ghee is known for its high smoke point, flavor, and aroma. The word ghee derives from the Sanskrit word “Ghrita,” which means “to pour,” as ghee is poured from one container to another during its manufacture.

It is commonly prepared from cow’s milk (buffalo milk or sheep milk) or water buffalo milk but also can be made from other kinds of milk like goat’s milk or yak’s milk.
